The winemaking has attempted to focus on fruit expression and texture management from the different terroir’s within the vineyard. The heavier soil and older plantings of the roadside blocks were treated extremely minimally to preserve the dancibility of the wine. Here an experimental technique was employed for longer aqueous extraction using a two week pre soak prior fermentation. Fermentation started with natural yeasts and was co-inoculated for risk management benefits. Fermentation was over within 4 to 5 days on average and post soaks were minimised to under a week. The younger vines on the harder terrace soil was treated in a more conventional manner, 4 day pre soak, 5 day ferment, 10 to 20 day post soak for tannin and mid palate integration.

Coney Pizzicato Pinot Noir has a dense dark plum hue. The nose is typically Pinot, redolent of sweet berries with a hint of vanillin. The palate has beautifully integrated concentration with the wine already showing a harmony truly worthy of its elegant treble clef logo. At this early stage in it's development Pizzicato shows elements of blackcurrant and dark chocolate. Mouthfeel has the silky, unctuous quality required of serious Pinots. Tannins are ripe and gentle yet with the necessary persistence contributing to a long warming finish.

This Pinot Noir was matured for 18 months in new and old French oak. It has a deep crimson brick red colour with crimson hues. An excellent nose showing strong varietal character. The palate displays classic Pinot Noir flavours of cherry, strawberries and spices, which fill the mouth. Superb silky smooth texture and velvety mineral tannis. Excellent length, followed by a very long cherry plum spicy after taste.

“Fugiastro” Pinot Noir has a unique flavour derived from wild yeast, which is a key element of wild fermentation.
