Bress Bon Bon Cider RRP - $24.99 Bottle - $20.91 Case of 12 - $250.89           This a great Cider My cider making belief is that good fruit should be treated gently and with minimal intervention. The Bress Harcourt Valley Cider was treated in this manner. The apples were milled and then gently basket pressed. As this cider is made in a Normandy style, the blend was tiraged to induce a second fermentation in the bottle using the same techniques as those used in making Champagne. The cider then spent 6 months on lees. The cider was disgorged and an expedition liqueur was added to create a luscious desert style cider. This cider was crown sealed using minimal preservatives. "Lovely, fine, aromatic nose of fruit laced wine biscuits with a flicker of yeast. Warm and interesting. The taste has slight appley characters on impact with a waft of yeast and a lively bubble. Mid palate has good mousse creaminess and some ripe chardonnay flavours with a warm splash of yeast. This sparkling rosé made from Sangiovese is rusty salmon pink in colour. It is an elegant, fragrant wine displaying cherry, earthy, savory and tropical notes.
